We had a 14h cob mare at work that would get away from you leading her to the field or even just taking her outside to tie up, she also would barge the door the minute it was opened so sometimes we never even managed to get a headcoller on her, we used to put a chifney on her over the stable door whenever she had to come out it was the only safe way to guarantee her not hurting someone.

is he doing it as soon as he comes out to be tied up or is it when his led to the field?

If he breaks the baler twine when you tie him up, don't keep tying him to baler twine as he'll just learn that he doesn't need to respect it. Tie him to the ring so he learns to stand.

You are being paid to muck out not to turn the horse out/lead it around. One reason it misbehaves is probably that it doesn't get enough turnout. Are you a member of staff or mucking out for a friend?
